Barrel-Aged American Sour | 8% ABV | Spruce Tips
A mosaic offering with one component consisting of a Saison brewed with fresh spruce tips and fermented in stainless with a mixed culture blend from Escarpment Labs called "Fruit Bomb" that contains a Saison strain with balanced ester and spice aromas, an enigmatic Brettanomyces anomala strain with tropical characteristics, and a complex and fruity Brettanomyces bruxellensis strain. The second component made up of a Saison laid to rest for a year in a Chardonnay barrel from Wattle Creek Vineyard with our house mixed culture. Both were blended together with a bottle conditioning of fresh Brettanomyces anomala. This liquid has an acidity that is medium plus, a dryness that begs another sip, a perceived raspberry character from the spruce tips, and a hallmark back note of tropical pineapple.
